GINZA IWA 銀座 いわ

Ginza Iwa is a one star Michelin sushi restaurant recognized by the world gourmet guide award. It was opened in 2012 by Chef Hisayoshi Iwa, a sushi chef famous in Japan and worldwide, 

The course menu consists of appetizers and nigiri sushi. The ingredients are sourced from Toyosu, with the menu being composed of seasonal choices such as sweetfish, milt, eel, and blowfish. The carefully refined sushi here has a salty kick in the rice that makes it even more compatible with alcohol, and are made on the small side so they can be enjoyed as appetizers to have with drinks. The sushi is Edo-style, elegant, and high quality, with a careful balance between topping and rice. The alcohol is supplied from a long-standing store in Ginza, with around 10 types of sake available. From daiginjo to koshu (old sake) and raw genshu, there are a variety of options to go with the food.

Ginza Iwa is a sushi restaurant located on a quiet alley, with easy access from both Ginza and Shimbashi Stations.

Interior setting
The restaurant boasts hinoki counters and a warm interior composed mostly of wood, with a relaxing, clean atmosphere. There is a split between the first floor and a basement floor, both have counters for guests to watch the chef work their skills. The first floor counter can seat up to 7 guests, while the basement can seat 6 guests.


Chef Hisayoshi Iwa
Chef Hisayoshi Iwa, the owner of Ginza Iwa, who also well-known as sushi master, has over 20 years of experience in sushi making and currently owns 3 restaurants. He went to a vocational school and learn how to cook since he was 6. After graduating from school, Chef Iwa was an apprentice of Chef in Kyubei sushi restaurant for 3 years, then mastered his skills at Tokyo’s highly respected and Michelin-starred restaurant, Sushi Kanesaka, for another 12 years. Afterward he moved straight into the Ginza premises recently vacated by one of Tokyo’s top kaiseki restaurants, Kojyu. It is this combination of setting and great sushi that makes Chef Hisayoshi Iwa special.

Also, Chef Hisayoshi Iwa is one of the foremost master sushi chefs, known for beautifully choreographed handiwork, which is the vital part of this culinary, yet theatrical experience. The deftness of his hand movements and the quality of the sushi he fashions with them show that he is already a master of his trade, and well worthy of his Michelin star.
