In the chic district of Ginza, the restaurant of Dominique Bouchet, which presided over amongst others the kitchens of La Tour d’Argent and the Hôtel de Crillon, hopes to be a site of transmission for the culture, traditions, and cuisine of France. Right in the heart of Tokyo, wooden panels, velvety sofas, and white tablecloths recreate a decor typical of a Paris apartment. It is a setting worthy of its gastronomic heritage, to which the chef adds his own personal touch. Here, guests can taste blue lobster topped with crisp mashed potatoes and buttery French caviar or, a confit of foie gras marinated with Japanese sake or a fillet of Bazas beef with a Choron sauce.

Chef Dominique Bouchet, who is considered as one of France’s greatest chefs, has reach extends beyond the European city to the celebrated culinary capital of Asia,Tokyo, as well. He started on the route to becoming a chef by serving an apprenticeship with the Burgundian Chef Marcel Pouilly followed by studies at the Hotel Management School. Hired at the age of 22 by Joël Robuchon at the time of the opening of the Concorde Lafayette Hotel in 1974, he became Chef de Cuisine of the Jamin restaurant in 1978, 2 Michelin stars in Paris. Since then, he will never leave the world of the starred properties.
